Season Recap with Chef Paul Froggatt

Greetings from the kitchen of Kauri Cliffs! It's been a fantastic first summer for me at the lodge, and I'm excited to share with you the highlights from the season.

As at all of our lodges, at Kauri Cliffs we're always on the hunt for the freshest and most exceptional ingredients to incorporate into our culinary creations. That's why I'm excited to share some of our recent discoveries with you. 

First and foremost, I've been exploring the local markets and finding some incredible seasonal produce that has inspired our culinary team to create some truly remarkable dishes. From vibrant heirloom tomatoes to seasonal fruits and crisp greens, our chefs are always looking for ways to showcase the best that each season has to offer.

I was also thrilled to have stumbled upon a fantastic herb grower who is now supplying us with fresh herbs and microgreens. We've been incorporating these flavorful additions into our dishes and create complex and nuanced flavors that our guests are raving about.

My kids also recently discovered a great citrus supplier who grows Buddha hands - a rare type of citrus that we've been able to add into some of our dishes. These unique and flavorful fruits have been a real hit with our guests, who appreciate the creativity and attention to detail that goes into each dish we serve.

In addition to these exciting ingredient updates, we've also been getting out of the kitchen and cooking in new and unexpected places. I've had the pleasure of cooking down at Pink Beach, where the beautiful weather and ablility to connect with guests in a more casual and relaxed setting was a real pleasure. I've also had the chance to cook in our new food truck, which has been an incredibly fun and interesting experience. Cooking in a small caravan has presented new challenges, but our team have risen to the occasion and I've thoroughly enjoyed the process.

As always, our commitment to creating exceptional culinary experiences for our guests remains unwavering. By showcasing the best of what our local markets and suppliers have to offer, we're able to push the boundaries of what's possible in the kitchen and share our passion for great food with all of our guests.
